What to do with celery pulp left over from juicing?

I love celery juice and have been trying creative ways to use the leftover pulp. At first I dried it to throw into soups, but I still had a ton left. So I made this delicious celery soup. If you like Indian food, it’s the same consistency as Palak paneer.

Celery Juice is as filling as whole raw milk.

Generally there isn’t much risk to drinking celery juice and to me it’s refreshing and as filling as a glass of whole milk.

People with digestive problems like IBS might feel bloated or uncomfortable after drinking it. If you take medicine for low blood pressure, it could make your blood pressure drop too much. Celery juice can also interfere with blood-thinning medicines because it has vitamin K. Also, some people are allergic to celery, especially if they have pollen allergies. “

Celery Pulp

4 Tbsp Olive Oil
Pulp from 4 full heads of organic Celery (produced by juicing)
3 Cups of diced white organic potatoes
1 small diced sweet potato peeled
1/2 an onion diced
1 Tbl garlic powder
4 Cups Better than bullion broth
bit of green curry paste (optional)
5 more cups of water reserved
Green Curry paste
Salt and pepper to taste
1/2 C Milk

Sautee diced white potatoes and onions in olive oil 5 minutes. Add sweet potatoes and sautee another few minutes, coating with the oil.
Add celery pulp and coat with more olive oil if you wish. Add broth, with or without curry paste, salt and pepper. Add more water so that the liquid is even with the vegetables.

Bring to gentle boil, put on low heat, cover, and cook till potatoes are soft., about 20 minutes. Check after 10 minutes to see if it needs more liquid.

When potatoes are soft, turn off heat, uncover and allow to sit and cool for a while. Blend with an emersion blender or put in a regular blender and blend. Add Milk and blend some more. Serve with crusty bread. Freezes well.

Add more broth to make thiner or a dash of chili powder. This soup is so neutral, you can add just about any spice profile you like!
